oats upma - healthy upma made with quick cooking oats and mixed vegetables.

INGREDIENTS (measuring cup used, 1 cup = 250 ml)
for roasting oats:
  • 1 cup quick cooking oats, 100 grams
  • ½ tsp oil
other ingredients:
  • ¼ cup tightly packed finely chopped onion
  • ¼ cup finely chopped carrots
  • ¼ cup finely chopped french beans
  • ¼ cup green peas/matar, fresh or frozen
  • 7 to 8 curry leaves/kadi patta
  • 1 tsp mustard seeds/rai
  • 1 tsp cumin seeds/jeera
  • 1 tsp chana dal/split and husked bengal gram
  • 1 tsp urad dal (optional)
  • 8 to 10 cashews/kaju or peanuts
  • ½ tsp ginger/adrak, finely chopped
  • 1 or 2 green chilies, chopped
  • 1 to 2 tbsp chopped coriander leaves/dhania patta
  • 1.25 cups water
  • 1 to 1.5 tbsp ghee or oil
  • salt as required
INSTRUCTIONS
roasting oats:
  1. heat ½ tsp oil in a pan. add 1 cup quick cooking oats.
  2. stir and saute on a low flame till the oats become crisp. keep stirring continuously so that the oats do not get browned from the bottom. no need to brown the oats.
  3. remove oats in a plate or tray and keep aside.
tempering and preparing upma:
  1. in the same pan, heat 1 to 1.5 tbsp oil. add 1 tsp mustard seeds. stir and saute till the mustard seeds crackle.
  2. then add 1 tsp cumin seeds, 1 tsp chana dal, 1 tsp urad dal (optional) and 8 to 10 cashews.
  3. stir and saute till the chana dal gets browned.
  4. add ¼ cup tightly packed finely chopped onions. stir and saute till the onions turn translucent.
  5. next add ½ tsp ginger, finely chopped, 1 or 2 green chilies, chopped and 7 to 8 curry leaves. stir and saute for half a minute.
  6. then add ¼ cup finely chopped carrots, ¼ cup finely chopped french beans and ¼ cup green peas, fresh or frozen. stir and saute for 2 minutes.
  7. then add 1.25 cups water. cover the pan with its lid.
  8. on a medium flame simmer and cook this mixture till the veggies are almost done. about 8 to 9 minutes.
  9. then add the roasted oats. stir lightly.
  10. add salt as required. stir very well.
  11. then cover the pan again with its lid and on a low flame, steam the oats upma for 7 to 8 minutes.
  12. once done, then add 1 to 2 tbsp chopped coriander leaves.
  13. stir and serve oats upma drizzled with some lemon or lime juice.

neer dosa - soft, thin, light and lacy crepes made with rice batter. no fermentation required.

CUISINE: south indian, karantaka
SERVES: 3-4 (about 18 to 20 neer dosas)
INGREDIENTS (measuring cup used, 1 cup = 250 ml)
  • 1 cup regular rice (sona masuri or parimal rice or surti kolam)
  • 1.5 to 2 cups water or add as required
  • salt as required
  • oil for making dosas
INSTRUCTIONS
  1. soak 1 cup rice in enough water for 4 to 5 hours or overnight
  2. drain the soaked rice and add them in a wet grinder jar.
  3. just add water enough for grinding the rice. if you add all the water then you won't be able to grind the rice well.
  4. grind to a smooth batter and then take it in another bowl or pan.
  5. add more water to get a thin flowing watery consistency. i added 2 cups of water for 1 cup of rice. the addition of water depends on the quality and kind of rice. so add water as required.
  6. then add salt as required and stir well.
  7. in a cast iron pan or a non stick pan. drizzle ½ tsp of oil.
  8. just spread the oil all over with a spoon or small piece of cotton kitchen napkin.
  9. stir the batter and take a ladle full of batter.
  10. then pour the batter moving outwards to inside like the way we do for rava dosa.
  11. fill in the large gaps too with some of the batter.
  12. cover with a lid and cook the neer dosa till done. don't brown it or flip it.
  13. make a triangular fold on the tawa itself.
  14. then remove the dosa and place it in a plate. make neer dosas this way and place them separately without them touching each other in a plate.
  15. serve neer dosa hot or warm with coconut chutney, veg sagu, veg korma.
